High quality coffee cherries are selected from 915 growers who reside in the surrounding areas and who all cultivatesmall plots of land, not just of coffee but for food products and other cash crops.Processing Steps:1. Cherry selection. Measure brix (sugar) content of the cherries. Brix >20 only. 2. Mechanical cherry sorting. Ripe cherries are sorted from green and otherimpurities.3. Float cherries and remove floaters.4. Let cherries dry for 48hrs on inside and shaded drying beds.5. Wash and smoke the plastic tanker. Smoke is produced from olive tree trunks. 6.Put cherries inside the smoked tanker and quench with water.7.1Fermented for 96hrs. (48hrs anaerobic fermentation and 48hrs aerobictormentation. 8. Remove cherries from the fermentation tanks and place them inside on shadeddrying beds for approximately 25 days.

  Ethiopia Washed Chelle  Tasting Notes: Apricot, Jasmin & Jasmin Tea Nestled in the Gedeo Zone just south of Yirgacheffe, Gedeb boasts a coffee profile that earns it the moniker "Virgacheffe" for its flavour similarities to its neighbouring beans. The majority of coffee varieties gown in Gedeb fall under the JARC coffee varieties (74110,74158,74112) and local varieties Heirloom (Wolisho, Kurume, Dega), with the district being a hub for coffee farming families renowned for their top-quality produce. Small-scale farmers in Gedeb typically operate on plots of land measuring less than 5 hectares, often gauging their coffee farms by tree count rather than area. This region's traditional cultivation methods reign supreme, with coffee plants coexisting in integrated garden settings alongside other food crops. Many farms in Gedebalso maintain an organic approach by default. At the Chelbesa wet mill, ripe cherries are meticulously processed through steps, including fermenting for 36-72 hours in concrete tanks, defect removal, grading, and sun-drying on raised African beds. Brew cold brew coffee the easy way with the Hario Cold Brew Pot 1 L Built with a heatproof Hario glass carafe and a BPA-Free plastic filter and lid, it doesn’t get much simpler that this. Cold brew coffee is known for being smooth and sweet compared to hot brewed coffee. Cold water doesn’t extract as many acids and tannins, reducing in a low acidity and low bitterness in the final cup. You can use the concentrate to make iced coffee, hot coffee, or mixed drinks. The permanent mesh filter has 60 micron holes, too small to allow coffee grounds to enter your final brew. It’s easy to clean and should last a lifetime. Here’s a brief recipe: Coarsely grind 80g - 90g of coffee into the mesh filter. Add 1 L of cold, clean water to the pot. Let it steep for 12-18 hours in the fridge or on the counter. Take out the filter and store the concentrate in the fridge for up to two weeks. Mix the concentrate with cold water and ice for iced coffee, hot water for hot coffee, or mixers and a spirit for a coffee-cocktail.
